I’m eating breakfast right now and reading some news before I head off to work and this particular news item stuck out: Herb Peterson, creator of the Egg McMuffin at McDonald’s has passed away.

First introduced in 1972, the Egg McMuffin was the sandwich that started the breakfast menu at McDonald’s. It is made in a Teflon circle with the yolk broken, topped with a slice of cheese and grilled Canadian bacon, and served on a toasted and buttered English muffin.

I’ve eaten plenty of Egg McMuffin sandwiches in my lifetime and I think tomorrow, I’ll eat one more to celebrate the long life of this wonderful man!
