How Matsugen makes its soba

Soba is a thin Japanese noodle made from buckwheat flour. It is one of my favorite types of noodle to eat and I highly recommend that you try it (at home or at a restaurant) if you haven’t experienced it.

The video above shows how the soba is made at Matsugen, a restaurant in NYC that specializes and serves soba. It’s amazing that the noodles are handcut! [via]
