Pretty funny i just went to St George’s Spirits yesterday for a tasting and they talked about absinthe. One of the liquers we tasted was the absinthe and the first thing he mentioned was that the sugar cube is not needed. The tradition for the sugar cube was they used to put drugs into the sugar cube and this was how they got it into the drink. The drugs in the sugar cube are also one of the things that caused people to see things. They served it with 2 ice cubes and you swirled it until it became a milky color. It was a very pleasant drink to sip and it was not overly strong. the last tid bit of information he gave was that if sugar and required to make a specific absinthe taste good it is just bad absinthe. i highly recommend checking this place out if you ever are in the San Francisco area.
