Another fantastic video from Food Wine Dine featuring two other great Sydney-based food makers -- Olsson's salt and The Bridge Room restaurant. The Bridge Room wanted a custom-tailored smoked salt for their restaurant and asked Olsson to create this flavor for them. The salt is heated as little as possible and the brownish-gold color comes almost entirely from smoking only. Pretty neat!
I really want to visit an underground salt mine now after watching the video here. I can't imagine what the salt must do to mechanical parts in machinery and vehicles though. With the expectation of snow coming to NYC this evening, I feel like this is a very timely video to have enjoyed.
